2015 Reserve Pinot Noir
We do not release a Reserve every year, and for 2015 there is only a very small quantity. This is a very special wine, sublime in it’s refinement. It has rested in 50% new French oak for 12 months before bottling. This is aromatically elegant with attractive red berry, liquorice, roses and violets. Moving into a subtle pallet of intense mouth feel, spice and a savoury finish. A Pinot Noir of Charm and Grace.
Cropping Level: 1.8 Ton / Acre
Oak Treatment: 50% New French Oak Barrels
Alcohol: 13.0 %
Ferment details: Hand harvested fruit was gently crushed, then transferred to open vat fermenters, without stems or whole bunches. Wild yeast initiated the fermentation and Guy plunged the fruit cap three times daily to ensure gentle flavour and colour extraction. The wine was then gravity fed to French oak (50% new and 50% on year old Troncais and Alliers) for 12 months, blended then bottled in February 2016. The wine was given 8 months bottle age prior to release.
